Winemaker

Adam was the first member to join our team in 2015, to establish what is now known as Lundy Manor Wine Cellars. Working closely with the proprietor, he began developing the brand, planting vineyards, and sourcing equipment for our first harvest in 2016. Prior to this, he was a winemaker in Prince Edward County where he gained invaluable experience working directly with the soils and climate that make the region’s wines so unique. He became a Certified Sommelier through the Canadian Association of Professional Sommeliers in 2011 and has worked for some of the top wineries in Niagara, Prince Edward County and New Zealand. He has a passion for the wines of Niagara, and created a virtual label as a way to showcase the potential of what it can produce. Adam is a graduate of Niagara Colleges Winery & Viticulture program; he has fallen in love with the endless world of discovery that wine offers, and seeks out every opportunity to learn and develop from his experiences through work, travel, and studies. In his spare time he enjoys going on walks with his wife Caitlin, his son Liam, and his red setter Harvey.

Born in 1986 and raised in Guelph, ON; in a family where food and wine was and remains a big part of his life. In 2005-2007 he studied the Winery & Viticulture program at Niagara College. Since taking the program, he has not stopped learning about wine and the wine industry. In 2006 Chris started his co-op placement, and in the few short months of his first harvest it became clear that winemaking was his destiny. Twelve harvests and over ten wineries later, he was exposed to a wide range of wine styles and methods, including the ‘Appassimento’ method of drying grapes. Now, with over a decade of Appassimento winemaking experience, he has become known as an expert in this style. He has travelled to France, the United States, South Africa, and across Canada to experience and gain deeper knowledge for wine, food and culture. He has had the privilege of tasting wines and sharing personal insight in techniques with some of the top wine producers in the world. Chris sees his job and experiences first as a passion, hard work and dedication.

Originally from Niagara, Mark began living all over the globe after acquiring his BA from Brock University. His wanderlust ruled for the next 20 years, he called his home Europe, Asia, Los Angeles and New York City. He’s a dedicated professional who has worked in Michelin Star and 4 Diamond properties and has had the privilege of working with accomplished Chefs including Daniel Boulud, Normand Laprise, David Boulay, David Lee and Anthony Bourdain, each of whom set flawless service to strict standards, have left lasting impressions. Mark’s thrilled his journey has brought him full circle, back to Niagara’s world class wineries, restaurants, farms, festivals, forests and inviting locals where he now enthusiastically promotes his personal enjoyment and knowledge of food and wine.

Along the way, she’s acquired valuable professional relationships within the industry and partnered with people who all share a passion for the dramatically different. With a flawless attention to detail and expert execution she has acquired a reputation for getting things done…really well. From weddings and corporate galas to private social events, Erin brings her client’s vision to an epic new level!

Sally hails from Beijing, China. She travelled to Canada in 2014 to study Hospitality – Hotel Operations Management at Centennial College. After graduation, Sally decided to move to Niagara and study Wine Business Management at Niagara College, graduating in 2017. With a passion for continuous learning, Sally next achieved WSET level 3 certification. Sally is excited to utilize her extensive Hospitality focus education and wine knowledge while serving our Asia Pacific Markets.

Winery/Event Supervisor

Paige is a home-grown Niagara resident with an appreciation for all the region has to offer. She has years of experience in the world of high-volume retail which has afforded her impeccable guest service standards. With a passion for Niagara wines and the desire for a change, Paige set her sights on the retail sector of the wine industry, which led her join our opening team. Paige is always smiling and quick to provide a level of service beyond the expectations of guests to the winery. In addition to her role as Winery Supervisor, Paige also assists Erin with private events, where her precise attention to detail is a true asset. When she’s not working, she will most likely be found in Morón, Cuba with her husband Nestor. We are proud to have her on our team.
