All of whites are handpicked and whole cluster pressed allowing for maximum fruit flavour extraction. We believe in a long lees contact after fermentation to develop texture, complexity and soft aromatics in the wine. Wines are then aged in new and neutral barrels in order to accentuate the Niagara region terrior.
